Chocolate Brownie with Salted Caramel Topping

Sweet Potato Brownie

Ingredients

1 Medium Sweet Potato (grated)

2 Eggs

1/2 cup Coconut oil (melted)

1/3 cup Honey or Maple Syrup

1 Teaspoon Vanilla extract

1/2 cup Cocoa Powder

1 teapoon of baking powder

1 teasppon biarb powder

3 Tablespoons of coconut flour


Pre-heat over to 180 degrees C.

Prepare a brownie tin with baking paper or oil.

Mix all ingredients in a large bowl or a blender (I use my Thermomix)

Once all ingredients are well combined

Place ingredients into prepared tin and place in the oven for 25-30 minutes.

Once cooked allow to cool for a good 10 minutes before cutting, then allow to cool completely before adding topping.


Salted Caramel Topping

Ingredients

1/4 cup coconut sugar

2 tbs butter

4 tbs coconut cream

1 teaspoon salt plus extra for finishing


Over medium heat in a small saucepan place all ingredients into pan

Mix until butter has melted

Once bubble appear, take off heat and whisk until no more bubbles.

Repeat this around 5/6 times until mixture thickens.

Let mixture cool around 10/15 minutes

Place in a pipping bag a drizzle over the top of the brownie.


Enjoy brownie warm or cold!

Don't eat it all in one sitting :)
